GASTRONOMY
 

To say that the gastronomy of Alentejo revolves around bread, olive oil and herbs is to reduce it to less than its essence. However, the know-how is old and wise. The recipes were handed down through times and generations, sharing the secrets to extract the most of the bold flavours. To enjoy these pleasures is reason more than enough to visit this region over and over again. Trust us, one visit is definitely not enough. The best option: do as the Alentejanos - eat and drink as the seasons go.
The traditional cuisine is based on pork and lamb, olive oil, bread and herbs. The infinite combinations show the imagination and inventiveness of the people of Alentejo. Açorda, Lamb Stew and Dogfish Soup are just examples of dishes that are staples of this are. The Alentejo has a sweet tooth that can be tasted on its pastries originating on the many monasteries and convents that once populated the Alentejo.


RESTAURANT “COZINHA DE SANTO HUMBERTO”
How an old vine cellar becomes a top restaurant.
   
Ideally located on the very heart of Évora, Cozinha de Santo Humberto has been part of the city since 1971. 
   
 The space was previously occupied by a wine cellar that laboured until mid XX century.
The entrance to the restaurant is discrete. From the outside one can only see a small window protected by rough iron work and an arched door. The tell sign is a small tile (azulejo) panel representing the patron Saint.
The décor is rustic and tasteful. One of the best features on the décor is the small niches resulting from the adaptation of the space to its function as a wine cellar. However, those who come to Cozinha de Santo Humberto come for the food and there is a lack of words to describe what comes out of our kitchen. To taste is the only way to truly enjoy the knowledge we learned from our ancestors.
